On the way home from a day out of the city, Sally stopped to pick up pizza for dinner at a take and bake restaurant. On the way to the restaurant, she noticed traffic lights were flashing off and on. Had there been a power outage, wondered Sally. The restaurant employee confirmed the power did go out for about an hour. Sally asked, “So what did you do?” The employee exclaimed, “We didn’t know what to do! We just took out our phones to use as flashlights.”

In this lesson, you will learn how to plan, prepare and train staff to respond to an emergency such as a power outage. When an emergency happens, all staff need to be prepared to protect food and public health.
