This course will provide an overview of foodborne pathogens in the United States.  Students will become familiar with the natural history and epidemiology of foodborne pathogens such as Salmonella enterica, E. coli O157:H7 and other Shiga toxin-producing E. coli, Campylobacter, Norovirus, Shigella spp., Listeria monocytogenes, Staphyloccus aureus, Clostridium perfringens, Bacillus cereus, Hepatitis A virus, Toxoplasma gondii, and others.  This will include clinical presentations, reservoirs, modes of transmission, specific food vehicles, and measures to prevent or reduce infection.

This non-credit course meets with the academic course PubH 7230-101 as part of the 2019 Public Health Institute.

Objectives

At the end of this course students will be able to:

  1. List the most common or important foodborne pathogens in the United States, their relative frequency of occurrence, and the important clinical features of each
  2. Describe the primary reservoirs and ecological niche(s) for each pathogen
  3. Describe the modes of transmission of each pathogen to humans (e.g., foodborne, waterborne, person-person, and/or via animal contact), and the relative importance of each mode
  4. List important food vehicles for each pathogen, and likely methods of contamination of these vehicles
  5. Based on clinical presentation of outbreak cases, identify possible etiologic agents
  6. Based on initial exposure information reported for a group of outbreak cases for which the etiology is known or expected, design an appropriate investigation

Registration & Cancellation

The registration fee for this course is $595. You will receive an email letter outlining program logistics two weeks prior to the start of the course.

Requests for refunds will be honored in full if a written cancellation request is received prior to the course start date. An administration fee of $50 will be charged to all refund requests received after the first day of class. The Centers for Public Health Education and Outreach (CPHEO) reserves the right to cancel any course. In the event of a course cancellation, registrants will receive a full refund of the program registration fee. CPHEO is not responsible for refund of travel or other costs incurred by registrants.

The Centers for Public Health Education and Outreach will provide a certificate of attendance verifying 1.5 CEUs (15 contact hours) offered for this program. This course is eligible for 15 CPH recertification credits.

All courses are approved for CPH Recertification Credits by the National Board of Public Health Examiners.
